What a fantastic evening we had on Friday, enjoying the delights of a Sake Masterclass with @akashitaisake and @thesushico. 🍱
This was definitely an evening of education as much as enjoyment, and we all came away having learnt a lot about the traditions and etiquette surrounding sake and the process of producing the traditional Japanese rice wine.
We tried seven different types of sake, all of which were uniquely paired with small plates. From traditional sake through those often enjoyed alongside or after dessert, and even sparkling sake, we sampled the full Akashi-Tai range together with a variety of sushi, mochi and even dark chocolate. By far the most popular sake of the night was the Junmai Daiginjo Genshu!

Ahead of welcoming our guests to our SOLD OUT Sake Tasting tonight, hosted in conjunction with @akashitaisake and @thesushico, we`ve been looking at various pairings of food and sake. 🍱
A delightful pairing that we came across is Akashi-Tai Shiraume Ginjo Umeshu paired with Passionfruit and Mango Mochi! The complementary fruit profiles of both the rich, sweet-tart plum notes of the Umeshu (Plum Liqueur) and the mellow fruity backbone from the Ginjo sake base bring our the intense tropical flavours of the passionfruit and mango. 🥭
What`s more, the mango adds a velvety sweetness that complements the liqueur’s smooth finish, and the sweetness of the mochi filling balances the sake`s acidity.
